If your goal is to eat more veggies or even to cut back on meat, the last place you might think to do that is in a sandwich.
But sometimes, you can only eat so many salads. Sometimes you just need that easy-to-pack, delicious sandwich when you finally make it to your lunch brea.k
Abandon all thoughts of a vegetarian sandwich just consisting of limp lettuce and tomato and a slice of cheese. These sandwiches are packed with flavor, full of healthy veggies, and will actually fill you up.
You’ll get your protein and fiber, tons of nutrients, and also cut back on sodium that is heavily concentrated in deli meat. A vegetarian lunch can be far from boring, especially when one of these sandwiches is on the menu!
Fresh mozzarella + tomatoes + arugula + basil + red onion + pesto
No one can say no to a grilled cheese, especially when it’s dressed up in all the right ways. In a panini press, layer your ingredients between two slices of whole grain bread. Press until grilled and melty.
Chickpea salad + avocado + tomatoes + spinach + sprouts
Chicken salad is getting a whole new makeover. You can easily make chickpea salad by mashing a can of chickpeas, sliced celery, some diced red onion, 2 tsp mustard, a dollop of Greek yogurt, and parsley together. Season with salt and pepper, and layer with all the other veggies on two slices of whole wheat bread.
Roasted eggplant + grilled zucchini + grilled halloumi + balsamic reduction + lettuce
Who doesn’t love crispy cheese? Grill your halloumi on both sides. This should take about 3-4 minutes. Grill your zucchini along with it. Add roasted eggplant slices and a little butter lettuce to the whole grain bun. Drizzle fillings with balsamic reduction.
Grilled portobello mushroom + roasted asparagus + roasted red peppers + caramelized onion
Meat surely won’t be missed in this option. Layer your roasted, grilled, and sauteed veggies on top of each other on a whole wheat sub roll. This sandwich is also amazing with a spread of sundried tomato pesto.
Beet hummus + tomato + carrots + cucumbers + microgreens
For a lighter sandwich, this is the one for you. Spread beet hummus on slices of pumpernickel bread, and layer with the fresh veggies for lots of delicious crunch.
Peanut butter + banana + honey + cinnamon
Not in the mood for something savory? We’ve got you. Nothing beats an old-fashioned PB&J, but we love this spin. Grill natural peanut butter, sliced banana, honey, and cinnamon between two slices of bread. Tip: we also love adding raspberries for a tart twist.
